Lemon poppy seed muffins

 

Today I, Krystie Millward of Results Personal Training, bring you Healthy Lemon and Poppy Seed Muffins. Since lemons are in full swing at the moment, what better than using them in a delicious muffin recipe. Please note when using coconut flour, you need to work quickly as it absorbs moisture rapidly. The final batter will be quite thick but turns out fine when cooked 🙂 Enjoy.

Ingredients:

1/2 cup Coconut Flour
1/4 cup Maple Syrup
6 Free Range Eggs
1/2 cup Butter melted
1/2 Tbsp Vanilla Extract
1/2 tsp Sea Salt
1/4 tsp Baking Soda
1 Lemon, zest and juice
1 Tbsp Poppy Seeds

Method:

Preheat oven to bake at 180 C
In a large mixing bowl, mix coconut flour, eggs, butter, maple syrup, vanilla, baking soda, salt, and lemon juice with a mixer
Add lemon zest and poppy seeds and mix
Grease muffin tins or line with paper muffin cups
Fill each muffin cup with 1/4 cup batter
Bake at 180°C for 35 minutes or until skewer comes out cleanly
