Kale Salad

Krystie Millward, personal trainer Napier brings to you a healthy recipe to add to your collection. As summer is approaching with the BBQ season in full swing (well nearly anyway), I thought I would bring you a refreshing, nutritionally dense salad. This salad is easy and quick to make and tastes great eating straight away or you can prepare earlier and leave it in the fridge for the flavors to soak in.

Try adding  raisins, different herbs, cheese… bacon… whatever you like.

Ingredients

1 big bunch of kale, stems removed

1/2 tsp natural sea salt

2 Tbsp Cold Pressed Olive Oil

1 Avocado peeled

1/2 Lemon, juiced

6 tomatoes, diced

1/4 c pinenuts

1/2 bunch curly parsley, chopped

1/4 c diced sundried tomatoes, soaked

Small Drizzle Balsamic Vinegar

 

Method

1. De-stem the kale. Roll together and cut into small strips. Add to a large bowl.

2. Add all the ingredients except for tomatoes and parsley.

3. Massage with your (clean 😉 ) hands the ingredients together in order to soften the kale and mix the ingredients through.

4. Add the tomatoes and parsley and toss well with your hands

5. Serve with your favourite meat.
