Great to eat hot or cold, try different vegetables and feel free  to add meat ie. chopped bacon or sausage would work well. You can also change the seasoning to mix it up.

1 large zucchini, shredded or grated and strained

2 large carrots, shredded or grated and strained

12 eggs, beaten

1 teaspoon butter, bacon fat or coconut oil

Fresh or dried rosemary

Sea salt

Method:

1. Preheat oven to 180 degrees and grease a 9 inch x 13 inch baking dish with butter

2. Mix together zucchini, carrots, rosemary, salt and eggs in large bowl and pour into dish

3. For a swirled effect, use a fork to create a circular pattern before baking

4. Bake for approximate, 45 mins or until edges are brown. The quiche will puff up while baking and then deflate when removed from oven

Serving size and way: we would serve this with a fresh green salad dressed with olive oil. Cut a slice of quiche that would fit into your palm.
