Give these a go if you are looking for a breakfast alternative to eggs. Great to serve up to friends and taste delicious. If you leave out the maple syrup and vanilla, and add say pumpkin seeds, you could also use this recipe as a savoury toast alternative. Enjoy!

3 egg yolks
3 egg whites, room temperature
1/4 cup coconut milk (can use milk if prefer)
1 cup almond flour
¼ teaspoon salt
1 teaspoon vanilla
1 teaspoon maple syrup
2 tablespoons coconut oil melted (or unsalted butter)
Coconut oil or butter for waffle iron

Directions:

Preheat waffle iron.
In a bowl, whisk egg yolks and milk.
Add almond flour and salt. Mix until combined and smooth.
Add melted coconut oil (butter).
Add vanilla and maple syrup.
Whisk egg whites until they form moist, stiff peaks.
Fold about ¼ of egg whites into batter. Continue folding egg whites with another 1/4 batter until all combined
Scoop a couple of tablespoons of batter onto the middle of a preheated and greased waffle iron. Close the lid gently!
Cook until golden brown.

Topping suggestions:
– Whipped cream, bananas and drizzle of maple
– Butter and raw honey
– Bacon, banana and maple syrup
– Fresh berries and crushed nuts
