Two favourite recipes that are easy to make and taste delicious. Kale chips are a great alternative to normal chips and much healthier. You can buy these from health food stores, however save your money and make your own for a fraction of the price. Cauliflower mash and rice is a great alternative to mashed potatoes and white/brown rice. Give this a go and see whether the rest of the family will know any different.

Kale Chips

Ingredients:

Kale Chips

Bunch of Kale

Sea Salt

Cold Pressed Olive Oil

Any other seasoning you would like ie paprika, chilli, thyme etc

Method:

  1. Pull the leaves off the stalk, either rip or cut thinly and discard the stalk (or use in a stock)
  2. Place on an oven tray and drizzle olive oil over to coat the kale
  3. Add salt and any seasoning and then either with you fingers or a spoon ensure the seasoning and oil has coated the leaves.
  4. Place in an oven at 180 degree celcius and bake until crispy (around 10 minutes)

Cauliflower Mash/Rice

Ingredients

Head of cauliflower

Butter/cream/coconut oil

Salt and pepper

Additional options: garlic, shredded coconut, slithered almonds, cheese

Method for Mash:

  1. Add chopped cauliflower into a pot of boiling water and boil until soft (not too soft though)
  2. Drain water, add a big knob of butter or coconut oil or a large splash of cream, season and using a kitchen blitzer or whiz, blend until smooth and creamy. Adding cooked garlic to the mix also tastes delicious or grated cheese.

Method for Rice:

  1. Grate or in a food processor mix until fine pieces (resembling rice size pieces) the cauliflower.
  2. In a pan, add a big knob of butter or coconut oil and on a low heat, pan fry the coconut. I sometimes add a little water also and put a lid on to help cook the cauli through.
  3. Once cauliflower is soft and heated through, take off heat and either serve or add shredded coconut and mix through or slithered almonds or spices. The options are endless.
