Nachos is one of my favourite meals with the combo of hot flavoursome meat with cold guacomole and sour cream.  Unfortunately it is not the same without a crispy chip involved, and although corn tortilla chips are tasty, they have loads of preservatives and colours a healthy body will not won’t to consume too often!

So I thought I would bring you another option which is healthy and tasty. Homemade kumara chips. Although in the picture my chips didn’t turn out as crispy as I would have liked (in Paul’s opinion – ‘not at all’) due to getting home after 8pm from Fitness Camp then deciding to make these and running out of patience as the hunger set in, if you do have time, then crispy thin kumara chips are the answer.

I preboiled the kumara in slices till al dente, then either in a fry pan or oven, fry/bake the chips until golden and crispy. You can put sea salt over them, along with any other flavouring, paprika and chilli are tasty options, then to serve, place around outside of plate and put mince combo in middle of the chips so they don’t go soggy.

Add lots of onions, garlic, fresh/dried herbs and spices, tomatoes (and in this case spinach) to the mince while cooking, and serve with homemade avocado/guacamole and sour cream and of course lots of grated cheese. Hope you enjoy!
